Instant Pot Ham Mac & Cheese

Ingredients
1, 16oz box of pasta (Rotini)
2 Cups chicken broth
2 Cups water
1 tsp Hot Sauce (optional)
1 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper
1/2 tsp paprika
1/4 tsp ground mustard (or 1/2 tsp mustard)
1 lb. diced ham
4 oz cream cheese
1/4 Cup ranch dressing
1 1/2 Cup shredded Cheddar cheese
1/2 Cup shredded Gruyere cheese
1/2 Cup milk
Directions
- In your instant pot combine the pasta, chicken broth, water, hot sauce, garlic powder, salt, pepper, paprika and ground mustard.
- Place the lid on the pot. Cook at high pressure for 5 minutes, and do a quick pressure release once done.
- Open the lid, stir in the ham, cream cheese and ranch dressing.
- Stir in the milk, and add the cheese one handful at a time (total of 4-5 handfuls). Stir in between each until cheese is combined. Serve in bowls, or on plates.
Notes
- Hot sauce is an optional ingredient – I’m not a huge fan of spicy food, and I didn’t notice ANY spice in this dish
- You can add ham, diced chicken, broccoli, corn, – anything really! This could easily become a “well rounded” meal instead of just noodles and ham.
- I didn’t have “plain” cream cheese on hand, so I used some of the “garlic and herb” cream cheese from our local bagel place. This made it have a great flavor!
- This warmed both my soul AND my belly.
- You can also use whatever combination of cheese you’d like. Pepper Jack would be a great replacement for the Gruyere if you’re looking for something a little more spicy!
