Insta-Pot Turkey Vegetable Soup

Ingredients
Oil, for cooking
1 lb Ground Turkey
1 onion, diced
1 green pepper, diced
1 lb carrots, diced
1, 16 oz package brussel sprouts
32 oz chicken broth
32 oz crushed tomato
1 Tbsp garlic powder, or minced garlic
Salt and pepper, to taste
Italian herb blend, to taste
Directions
- In the instant pot, saute the ground turkey with the diced onion until turkey is nearly done, and onion is translucent
- Add the remaining vegetables, and saute until coated in oil
- Add remaining liquids to the pot
- On the “Soup” pressure setting, cook for 25 minutes. Release the steam once the cooking is complete. Add herbs, salt and pepper to taste and serve
Notes
- Super easy, super comforting recipe. It would be good with a sprinkle of parmesan cheese, or some fresh bread, or with additional vegetables!
