Insta-Pot Turkey Vegetable Soup

Ingredients

  • Oil, for cooking

  • 1 lb Ground Turkey

  • 1 onion, diced

  • 1 green pepper, diced

  • 1 lb carrots, diced

  • 1, 16 oz package brussel sprouts

  • 32 oz chicken broth

  • 32 oz crushed tomato

  • 1 Tbsp garlic powder, or minced garlic

  • Salt and pepper, to taste

  • Italian herb blend, to taste

Directions

  • In the instant pot, saute the ground turkey with the diced onion until turkey is nearly done, and onion is translucent
  • Add the remaining vegetables, and saute until coated in oil
  • Add remaining liquids to the pot
  • On the “Soup” pressure setting, cook for 25 minutes. Release the steam once the cooking is complete. Add herbs, salt and pepper to taste and serve

Notes

  • Super easy, super comforting recipe. It would be good with a sprinkle of parmesan cheese, or some fresh bread, or with additional vegetables!
